Vanilla word is derrived from the Spanish word “vainilla”, little pod. it is expensive and is the second most expensive spice after saffron.  Despite being expense, it is highly valued for its flavor through out the world. India is now very fast emerging as a major vanilla grower. Vanilla cultivation is getting adopted in the southern states of Karnataka ,Kerala, Tamil Nadu and Andhra Pradesh. Bourbon quality vanilla beans has sweet, aromatic and pleasant flavor are grown here in these parts. Indian vanilla beans are cured for a processing period of 5 to 6 months. They are considered to be at par and equivalent  with the Madagascar beans. Vanilla beans which are cultivated in some parts of India are of the world’s best variety and quality.
